It's a WRAP!

AND some amazing granola!

Chef Bill visited us on Thursday, January 21st and made an amazing granola!  I have included it below and noted some changes that were made.  One of the suggestions Chef Bill made was to add your chopped dried fruit at the end when you take your granola out of the oven instead of including it with the oats and liquid.  He heated the honey, vanilla, brown sugar, vegetable oil and cinnamon in a pot on the stove and then poured it over the bowl of oats and mixed thoroughly to ensure that the liquid was distributed evenly.  We added chopped craisins, chopped dried figs and chopped raisins (that had been soaked in orange juice to soften) immediately after bringing the oats out of the oven.  To make granola bars you would need to add more liquid to your rolled oats and press them in a pan.  Consider adding nuts, coconut flakes or other items you like to your granola and make it your own!

Granola Recipe

In addition to making the fresh granola, we made a short video on WRAPS!

TZATZIKI SAUCE:  1 16 ounce container of sour cream, 1 english cucumber chopped fine and drained, 1/2 cup dried dill, 1/4 cup lem juice or to taste, 1 teaspoon salt or to taste

Mix all of these ingredients together and enjoy them on pita wraps, as a vegetable dip or whatever you would like to try!

PEANUT SAUCE:      1/3 cup creamy peanut butter, 2 tablespoons rice vinegar, 2 tablespoons tamari or soy sauce, 2 tablespoons honey, 1 tablespoon toasted sesame oil, 1 tablespoon garlic powder or 2 cloves garlic pressed or minced and 2 to 3 tablespoons water to thin the dip.

Mix all of these ingredients together and enjoy them on your spring rolls!  Seriously folks - who ever thought of shrimp and peanut butter or chicken and peanut butter, but hey, IT WORKS!
